Hmm - I don't see anything to turn that sort of behavior on or off in
Firefox's control panel.  Are you using a font with italic/bold
capabilities?  I just use Courier New for plain-text, but if you're
using something with a limited number of alternate typefaces, it might
not work.  Other than that, I don't know.  What version are you running?
