I would show as much as you could without displaying the business logic
crucial to the company.  You can always mask certain sections if you
need to.  Viewing sample code is a good way to learn a lot about a
potential candidate.  Also a demo of the code is nice as well, unless
you can't access it from off site, then screenshots would be ok.

You want to impress that company with as much as you can...
