In guitar player speak:

   Easy = I know how to play it
   Hard = I don't know how to play it

  Easy is kind of subjective.  I suppose it all depends what she knows.

  Are you gonna start her with chords, or notes?  For "note" songs things 
like Greensleeves, Jingle bells, Hot Cross Buns, etc...

  For "chord" songs, I personally learned ~90% of the Nirvana 
catalog.  Polly is a really easy song, but it's not entirely open chords.
  Freebird = The mix of picking and strumming might be confusing to a newbie.
  Stairway = I never learned it beyond the beginning intro.  It is common 
to learn because it has all the chords (I suspect that means all the chords 
in any given scale, not every chord). I wouldn't start there.

  The singer in my band is starting to take guitar lessons.  At her first 
lesson she learned Am and C chords, but I haven't been on top of her 
progress.
