I would guess only if the technology you learned is proprietary to the company. 
 If not, as much as many companies want to, they can not prevent you from using 
your skills to earn a living.  It is really a grey area.

I have a long time friend who works for Intel.  He told me a story of an senior 
engineer who left Intel to work for Motorola.  Intel had file court cases to 
prevent this man from using skills gained at Intel in his new job.  While the 
cases where being argued, the man was sitting at home drawing salaries from 
both companies.

I would have taken one of those salaries and invested it in some very safe, 
sort term bonds or something; he was going to have to repay one of them, once 
the case was decided, but not any interest earned on it.
