I *knew* someone would play on this! :) Of course, I mean cold-smoking jalapenos using smoke from a slow mesquite wood fire.
I was going to create a chimney smoker from some large-diameter galvanized ducting. I'll drill pairs of holes across from each other and slip notched wire tubes through the holes to support expanded metal screens on which I'll place the jalapenos. The screens will stack about 4" above one another for about three feet, which will give me enough space to smoke at least a few hundred at a time. I'll attach a U-section to the top to bend it back toward the ground so that rain doesn't get in. The whole thing will just sit on top of the fire tray, which will be suspended above the ground to allow circulation under the tray to cool the fire. There will be just enough space around the fire tray to allow a small amount of air to keep the fire going, and I can adjust this by lowering and raising the tray. This setup should also allow me to smoke Vidalia onions, which I can then caramelize using sweet butter, a touch of brown sugar, and just a hint of the previously mentioned chipotle (smoked jalapeno) sauce to create a sort of smokey onion chutney for anything from hot dogs to pulled barbeque.
