If you lower your DNS TTL values NOW to a reasonable values, say 3600 seconds (1 hour), you can put the new server in place, THEN change your DNS entries to the new system all at once and things will propagate out much more quickly. Some ISP's will ignore your lower TTL and cache longer anyway, so you should still leave the "temp" server in place to handle those for a while.
I've moved a lot of sites, and a lot of servers, over the years.
