Made a number of port calls there when I was in the Navy; the Dubai emerate is good when it comes to western standards; there are several good hotels and a good market. Gold was relatively well-priced too. My three main memories from Dubai are long bus ride to the edge of town from the port (and all of the sand... whoof) and playing laser tag at the mall and hearing about a moslem woman who was stoned to death for going out on a date. Take into account, though, that I was last there in 1996; a lot could have changed in that time. I do know that they built the Burj Al Arab Hotel http://www.burjalarab-hotel-dubai.com/ . You would do yourself well to read up on the customs and traditions of the area, especially with regards to alcoholic beverages if you are so inclined.
