Well, after he created Narnia then the animals popped up out of the earth. As they came up he touched pairs of them on the nose and they could talk. However I don't remember the part about the others being for hunting.
Well that scene was more like, after Aslan had picked the chosen animals by touching them on the nose, the unpicked wander off into the wild. And Aslan says something about that the chosen should not be prayed upon.
