I'm late to this, but... I honestly don't think it's that bad of a review. I think that your clientele probably don't have the most sophisticated palates. If they did, they'd be cooking at home with top-shelf ingredients, or going out to dinner. Your clients are folks that value convenience and healthiness. Restaurant reviewers don't tend to fall in quite the same category - they're supposed to have sophisticated palates. They're supposed to be able to taste the difference between top shelf and rail.
The reviewer praised some of the meals, and praised the concept in general. I think he/she has a valid concern over food contamination issues. I'd be more comfortable if everyone wore gloves and changed gloves between stations. (I think that's how our local version of this type of business does it.) I think the thing to remember here is that by all accounts your wife's business is a screaming success. The last thing you need right now is an assault charge because one silly reviewer got under your skin. (By the way, most of the folks around here think most of the reviewers are total idiots, and we rarely make a decision about where to eat based on a review.)
