Sedona is an easy drive from Phoenix, and supposed to be beautiful. Slide
Rock park is close by - slide down a natural water slide! On the East side
you've got the superstitions. You can drive out Apache Trail to Tortilla
Flats and eat cactus ice cream. Downtown Mesa has a ton of life-size
sculptures lining the streets and some quaint shops. Downtown Tempe has a
good Greek restaurant (My Big Fat Greek Wedding) - which is probably a
chain, but it was tasty and huge portions. There are a ton of chain places
on Mill Avenue through downtown Tempe. The Heard museum (
http://www.heard.org/) is supposed to be excellent, though we've not been.
(We have been to the Mesa children's museum, and that's good if you're
bringing kiddos.)

Skip the ghost town train at Goldfield, if you drive out to Tortilla Flats.
I haven't done the mine tour, but the train is pretty weak. There are some
boat tours up in the lakes in the Superstitions that I've wanted to go on,
but haven't.
