OK using the WW2 analogy so popular with the Shrubbery, should we have behaved 
like the Nazis? Shooting and torturing civilians, running genocide camps etc.

Even in situations where its to the death, there are certain rules you follow. 
Aside from the usual defensive answer (i.e., if we start doing X then others 
may do it to us), there's the moral question - "If you are fighting dragons, be 
careful you do not become one." In other words the NATO/US forces need to be 
careful of becoming a Taliban clone. By holding to certain rules it helps 
prevent us from d.

We are better than such scum, these rules help demonstrate that. 

Also there is the hearts and minds aspect of the conflict. We become known for 
hitting funerals, that resonates through not only the tribal Afghans, but the 
rest of the Islamic world. Why give the enemy one more recruiting tool? By 
making it plain that you may not hit such ceremonies, it makes it much more 
difficult for the Taliban and their allies to say "See these crusaders are 
complete barbarians, join with us and kick them out of our land."
