Shooting and torturing civilians, running genocide camps etc. Even in situations where its to the death, there are certain rules you follow. Aside from the usual defensive answer (i.e., if we start doing X then others may do it to us), there's the moral question - "If you are fighting dragons, be careful you do not become one." In other words the NATO/US forces need to be careful of becoming a Taliban clone. By holding to certain rules it helps prevent us from d. We become known for hitting funerals, that resonates through not only the tribal Afghans, but the rest of the Islamic world. Why give the enemy one more recruiting tool?
