Well Belize is in Central America, just south of Mexico. Amerbergris Caye is like a private island: you drive around on golf carts and the most dangerous thing happening there is a kids soccer game on the ocean in San Pedro. Or maybe too many tasty pastries from the local bakery. On Ambergris, there's no building taller than the palm trees and it's 1/2 mile from the world's second largest barrier reef. Best snorkeling in the Caribbean in my opinion; certainly the most fun. You can rent a boat and just tool around behind the reef, dive for lobsters, catch a few yellow tail or grouper and then stop at a one palm tree island (Caye) and cook up your catch over coconut shells. A couple of Belikins and you're set. You can even go fancy and have the boat guide (ask for Savaro) set up a 1st class picnic complete with white linen and silver champagne cooler. He does all the set up and cooking and you just sun tan til it's done.
