I too have only been to Denmark, but I spent a week there and family members have lived there. October *will* be chilly and the days will be getting shorter. I was there in mid-summer and dawn was at 2AM or something ridiculous. I liked Copenhagen a lot, and considered moving there. They do great breakfast buffets there, though I have forgotten the name... a sort of pastry smorgasbord with unlimited coffee. Ferries to Oslo are frequent (I just didn't take one). Hamburg, big city, spent a couple or two there in transit a couple times, nothing special imho. I have no driving trips to share, as I assume you have heard about the autobahns.
You might consider a side trip to Odense, which is a nice little town, and the birthplace of Hans Christian Andersen.
