Highlight "Multilevel List" on the paragraph group

Click the down arrow

Select Define New multilevel list.

Office 2007 makes it easy peasy.

Also, the "automatic" change should highlight when you mouseover (a
little blue box under the change). Click the down arrow and select
"Undo""Don't" or "Control AutoCorrect Options"
