With contract I've done a number based on my working day, and then a higher number if the work falls outside my normal "work day"
So if I set my work day as 9AM to 6PM and they call at 7PM needing me to do something right now, then it goes to the after hours deal. I never charged extra if I worked over because I was in the middle of something.
