You are making the incorrect assumption that the Bible is the only document on 
which Catholics base thier faith.  If that was true then your assertion would 
be correct.  It isn't.  Catholics also have 2000 years of tradition and other 
writings on which we base our faith.

As for the first 11 chapters of Genesis, that is a long set of parables, 
stories meant to teach; I never could figure out the context so I left the 
seminary.  It is as acceptable to some as the story of Coyote eating mesquite 
beans and pooping out the world.

If you attended a mainstream Catholic mass you would see that Genesis is a 
minor part of Catholic worship.  It is read on a handful of days during the 
liturgical year and has no affect on Catholic Eschatology.
