As a pure POP3 mail server that includes listserver functionality, I really like XMail. It isn't cheap- it's free! Installs from a zip on Windows, from an rpm on Linux. If you use Linux, you can plug it into Courier IMAP and use Horde, etc..., but at that point you get a little deeper into Unix-geek land than some may want to bother with.
