Comparing this to a touchpad is like comparing the Atari 2600 joystick to a
PlayStation 3 SIXAXIS: they both do sorta the same kind of thing... but are
nothing alike.

This isn't actually a touch screen.  The table houses a projector and
cameras - the table "sees" what's touching it and reacts accordingly.  It's
not pressure but rather the physical proximity that triggers recognition.

Unlike nearly all other interaction computer methods this is a direct
manipulation device, not "remote control".  The effect of your gesture is
registered at the point of contact (not, like with a keyboard, mouse,
touchpad, etc, upwards of several feet away).  That instantly makes it more
accessible and understandable.

Your hand is far from the only interaction device: the table can be
programmed to recognize just about anything (see the video "puzzle" made of
crystal tiles for example).  The table sees what touches it (the example
using the brush looks incredible): it can track objects and react to them.

There are countless possibilities for this.  Lay a magazine (or really
anything with a UPC code or RFID tag) on the table and you might instantly
see extended information.  Set a CD on the table and hear the music.

The interaction methods (touching the surface) are independent of the
technology (there have been mechanical, optical, and laser mice but the
interactions have remained the same) and because of this have the potential
to spread.  Any surface is a potential interaction point: tables, walls, the
dashboard of your car, the counter at the corner store, etc.

The possibilities for education alone are limitless.
