You could create an image of the server using Arconis
(http://www.acronis.com) and restore it your new hardware.

One thing I have been using lately is virtual machines. Using MS virtual
servers and Arconis - you can create a virtual machine and then using
Arconis make a backup and restore it to a physical machine, or take a
physical machine and restore it to a virtual machine.

Great for making backups.

I'm in a similar situation -- we're moving from one set of servers to 
another.  Here's my plan in general:

1)  Set up new boxes as much like the old ones as possible
2)  Put up a maintenance sign on the old ones.
3)  Make whatever final changes to the new servers you need (update 
database, files, etc.)
4)  Change DNS
