I've ripped about 3000 CDs to iTunes over the last 18 months. It's not a big deal to do.
If you have the music already on your hard drive, you can simply tell iTunes to load the file or load an entire folder into iTunes by selecting which option you want from the File menu, which you can then sync to the iPod. If you want to rip from CD to put on the iPod, just launch iTunes, stick the CD in and answer yes when it asks if you want to import the songs on the CD. If the information is stored on the CD in the correct format, iTunes will detect it and label the tracks. Note that is quicker to import the CD if you don't let it play while it is importing. I like iTune so much for organizing music that it would be my primary player even if I didn't have an iPod glued to my ear. The only function I miss from some of the other players is the ability to scroll lyrics.
