They delay the absorption of the sugars. Unfortunately I have Type 1 diabetes - the insulin producing cells in the pancreas have died. So I have to have insulin shots or be on an insulin pump. People with Type 2 diabetes still produce insulin, their bodies have trouble absorbing or processing it. So yes I can eat the sugars etc, but I have to take a larger amount of insulin to compensate for the increased carbohydrates. The problem is that I do eat something sweet and my blood glucose levels skyrocket.
