I don't believe that WireShark lets you change the data (does it)? Fiddler (as the name implies) let's you "fiddle" with the data to change information in transit - I've found it incredibly useful for testing out security scenarios with Web Apps. Also Fiddler is just plain optimized for HTTP where WireShark is a more general tool.
