Don't know about a tutorial, but you can select the signature to use in the Account Settings. I also have a Thunderbird extension called Signature Switch which lets me swap signatures easily while composing. There's a lot of nice addons for Thunderbird, I have one for stationary and a nice one to let me swap from full to condensed header, pop messages to full screen and back, etc...but I sure do miss using Eudora!
