You can for sure run one VM with XP and another with Server 2008 on ESXi.

We're using ESXi for our clusters... works a treat.

For just playing around tho, I'd use a "desktop" type of deal, instead
of ESXi, as you're going to have to drop into the "hidden" ESXi
console to do much cool stuff (like copying virtual machines, standing
up existing images, etc.).

They *really* want you to upgrade to their pro tools, basically.

Which are mind-blowing, BTW-- but not cheap.  =]
