Sorry if I had missed the thread from last week.
Reason I choose to keep Outlook is when travelling, if I do not have internet
connectivity (can not access GMail), I can still view the emails in Outlook.
Thinking about it more, I can view them in the IPhone.
So if I understand you correctly, you have Outlook hitting an exchange server
and your GMail interface using POP?
So you had to create labels in GMail for the email manually rather than the
IMAP settings to pull from the Exchange server?
I only have IMAP and POP access to the mail server. (not running an Exchange
server right now).

tooo funny, i just made this conversion last week.
i still have my outlook and exchange linked up, and my
iphone getting calendar events from it (work stuff) and
contacts, but email is all pop'd from gmail interface.
nice method, no more outlook chains on my feet
and i just feel overall better :)
