Well, to make mayo you use egg yolks, vinegar, and oil.

If you use a good-for-you oil like mac nut oil, walnut oil, or coconut
oil you get a great carb-free, healthy fats w/ some protein "meal" for
people that try to get 6-8 meals per day.
