I'd put in my vote for the Pacific Science Center. Seattle Center has quite a bit of cool stuff, the Science Center, Space Needle (though it is expensive to go up), the Monorail, Experience Music Project. There is also a decent little pub on the..hmm..northwest corner I think? called the Lower Queen Anne McMenamins. It's on 2nd if I recall.
Pike Place is a fun place to hang around, touristy sorts of stuff down on the wharf. Pike Brewing is right there and a nice spot to have lunch. The Seattle Art Museum had some great exhibits last time I was there but that was a number of years ago. Not sure what they are up to now. I'll try to dredge up some more from my memory.
