I use Carbonite for my laptop and it does pretty well.  The one thing to
watch out for is that by default it will only look in specific folders for
certain types of files and will exclude others by default (like videos).
You can tell it to look wherever you like and adjust the settings as needed,
but it won't get everything out of the box.  It took several days to push
the initial backup, but it usually gets new and changed files within half an
hour or so (or sooner if I tell it to backup immediately).  I've not had to
restore the entire computer, but I have used it to retrieve past copies of
files on a few occasions without any trouble.

On my servers I use JungleDisk Server edition.  It runs on a schedule rather
than monitoring files all the time and does a good job of moving files up to
Rackspace cloud storage for me.  It has come in handy to restore older
versions of files as well.
