We're crazy Americans, remember? :-) Maureen said it, irrigation is the key. The mountains have plenty of water and that water is mostly sent to the Central Valley for farming. I've heard suggestions that farmers in the Central Valley switch to less water-hungry crops than they currently grow as a way to provide more water to SoCal.
