I think I finally have all the wires that I need - now to either
invest in zip-ties or electrical tape!  Going for 6 feet wires for
every one was a bit of an overkill :)

In all, I'm very happy with the decision I made.  I've managed to get
the unit to record the USB output, though I can't mix in the audio
from the USB input... I'm getting around that by running a cable from
the computer's headphone out in to one of the open channels.

Last night I got the last bit of cabling I needed to connect my
cellphone in to the mixer - that was a last minute addition to what I
needed to be able to accomplish and I'm still tweaking the settings.
What I have is a 3 conductor 1/8" to go in to the phone going out to 3
RCA jacks (usually used to connect a camcorder to a TV) and then I
feed the speaker line to an open channel and the mic line to ... some
place.  Last night I got it working by plugging it in to the Aux Send.
 Unfortunately using that means I have to adjust the send volume back
to the phone using a different knob and the main mix sliders don't
change what is heard on the other side.  Maybe use a headphone
splitter on the phone out.

If I had to change anything I might have invested more on the
microphones I got... I got simple Alesis AM-1 mics and you have to
crank them to make the meter move on the mixer.  I'm also working on
leveling things on the PC, the record volume seems to be a bit low
compared to what I'm used to seeing in Audacity.
