Howie- you got it backwards. The Ashkenazim (Eastern European) are the ones who use the "S" sound. The Sephardim (North Africal / Middle Eastern, including Modern Israel), use the "T" sound for the same letter.
And I don't know I'd call it a "religion" - there are a lot of cultural differences too. "Culture?"
