The reason I was looking at mirroring/replication was because we have about 2 weeks of uptime on the new database servers where the rest of the infrastructure is being built. My thought process was that if I could have the servers linked and replicating data (I learned mirroring is not what I want to do) I could have the new servers ready to roll as soon as the rest of the work was done without needing a data restore and downtime period.
