I used to date an environmentalist who was big on native species ranching.
Since we were in MN on what had been prairie, that meant buffalo. Ranchers
kept giving her samples, which was great for me because she didn't eat red
meat!
Makes superb burgers, excellent spaghetti, and the sausage (at least the
variety I had) was tolerable if dry.
