For QuickTime it's "QuickTime VR" and Apple has some developer tools
here:
http://developer.apple.com/quicktime/quicktimeintro/tools/

There used to be third-party tools too, but I don't know if they are
still around or not.

The gist of it though is that you need to take a series of individual
photos of an object and then use the software to stitch them together
into a VR file. There even used to be special tripods and even cameras
to make these types of pictures. I recall a camera/tripod combo that
would automatically rotate a camera through 30-deg or so intervals and
snapped photos along the way. It ensured that you got a consistance
plane and distance so all your photos would stitch together nicely.
