Oh wait. You're not really asking about software to allow remote desktop on the Mac. You seem to be more concerned with the network connection and the security of it.
Well, for the Mac software, other than VNC and variants: http://www.netopia.com/en-us/software/products/tb2/index.html http://www.apple.com/remotedesktop/ I have briefly used the Apple software recently, but I don't like it compared to the MS remote desktop. I haven't used Timbuktu since 33Mhz was fast. As for your network, the easiest way is probably to do a simple port-forwarding for the ports that the remote software uses. The Mac is going to be a more secure point than opening the same port for a Windows box. That's fine and all for a start, but it's probably too limiting for the long-term since that means only that user gets to use those ports.
