Interesting to me...

Excellent point made about the health of employees. We must save the
restaurant employees, but the bartenders can all die.

I never really thought about late night, but it makes sense. I used to wait
tables at a sports bar / restaurant, and the money shifts were in the "pool
room". After about 11 pm (we were open until 2) the dining room was
generally dead, but the pool room was hoppin, much money to be made (and
many cigarettes smoked).
