Thunderbird! I've had it running now for about 4 months as my primary POP/IMAP client, and am loving it. It's fast, stable, and has plenty of management goodies built in. The Junk filter seems to be getting smarter, as well - it only misses a couple of spams per day at this point, and doesn't give any false positives any more.
