certainly do it all the time here for servers, etc., that are not DHCP. I
set several (3-4) to make sure that if one fails or moves I have a
fail-over, but the IP address of the DNS servers I tend to use hasn't
changed in YEARS UPON YEARS. So - Feel free to try setting the IP and DNS
manually, I don't think there will EVER be any problem.

Ahhhh. Well, that sucks. However, isn't the router (connected to the
internet) your local DNS source? If you point at that in manual config,
doesn't it act as a DNS host and mask the real DNS that is coming from the
ISP? Or can't you just set it manually to your ISPs DNS (they don't change
very often, do they?)

Problem is - in Windows when you switch from Object IP Auto to Manual,
the Obtain DNS Auto setting is FORCED to manual as well.
