Business-wise, if you can't make an accurate query (i.e. if you can't find
out for sure someone's gender) then I think it would make the most sense to
start off "Dear Potential Customer" or "Dear Leader in the Field of XYZ" or
something else equally gender neutral. Asking a bunch of people and making a
guess will probably work most of the time, but it will alienate those that
are guessed incorrectly.
