I have the same problem, as I have developed CF apps for a military
contractor for the last 3 years, where all apps are behind SSL and
password protection, and I am contractually obliged to not let people 
see them.

As a workaround, I developed an online portfolio with my resume,
screenshots, and code samples, with an explanation that everything lies
behind SSL and password protection...

I'm not sure if this works though, as I haven't received employment since
I developed the portfolio.  If there are better ideas, I would love to
hear them.  It can be painful, as I consider myself a very competent and
experienced developer, but I see "must send 3 URL samples" on job
postings and feel I come off as rationalizing when I explain my situation.
