what datatype is used for the text fields in the database? If it's 
nvarchar, they are stored as  unicode character data, UCS-2 encoded. You 
probably need to use unicode UTF-8 or ISO-Latin-1 encoding for your text 
data for the browser to understand it (you'll run into problems trying to 
use UCS-2 on any unix platform anyhow). In addition, ColdFusion doesn't 
support the Unicode character set, only sub-sets of it depending on your 
locale settings and Oracle has similar restrictions so you'll probably just 
wanna stick with ISO-Latin-1.

I've never actually used nvarchar in SQL server, but I'd guess you can 
simply change the datatype to varchar and existing data will be translated 
to ISO-Latin-1 (actually, it might be stored as ANSI, I'm not sure off the 
top of my head).
