How are you sure the collections are completing? Are you using mkvdk or cfindex? Are there a bunch of tmp files remaining in the swap space '/tmp'?
An idea I have is based on how Verity works. It uses the system swap space to store the spidered documents. The indexer then grabs those docs and puts them into the collections. Having multiple spiders running can cause you to run out of disk space. If the spiders are putting more info into the swap space than the indexer can handle and you run out of space it can hang the server. Another possibility is if you're indexing PDFs. In some versions of Verity, it has been known to have problems when trying to index multiple PDF at the same time. This was a problem with the keyfilter that Adobe provided Verity. This too can hang a server. You should try using the mkvdk (opt/coldfusion/verity/_iLnx21/bin/mkvdk) to index, it provides a more control of the indexing process. You should set the messaging level (-outlevel 64) to debug the indexing process. Alternatively, you could use the rcvdk to browse your collection to confirm the number of entries, etc...
