I think I would also advocate adding another standard attribute, something like "units_label" which would be a label for the units in a plot, not necessarily udunit compliant.

eg:
  var : units = "";
  var : units_label = "milligrams per gram of dry sediment";

solution to your problem that works in the oceanographic domain because 
alkalinity is the only thing we encounter in Equivalents and luckily for us the 
chemistry is such that 1 Mole = 1 Equivalent.
