I discussed this now with our modellers, and you are right, we are only
interested in stokes drift induced by sea surface waves. So my proposal
is then as follows:
sea_surface_wave_stokes_drift_x_velocity
sea_surface_wave_stokes_drift_y_velocity
units: m/s
description:
A velocity is a vector quantity. "x" indicates a vector component along
the grid x-axis, positive with increasing x. The Stokes drift velocity
is the average velocity when following a specific fluid parcel as it
travels with the fluid flow. For instance, a particle floating at the
free surface of water waves, experiences a net Stokes drift velocity in
the direction of wave propagation.

I'm looking for the standard-name for stokes drift for a wave-model:

It's defined by ECMWF as:

I couldn't find any, and if this is really the case, I would propose
something like
