I recently installed Service Pack 3 on a couple of my servers and it hasnt caused any problems :-) After the install, running Baseline Security Analyzer and hfnetchk, it turns out that I didnt have to install any more hotfixes for IIS. Use both these tools and Windows Update to see if there are additional patches you might need.
You should also check out URLScan, also from Microsoft. It catches a ton of hack attempts on my web servers. You might need to modify it's configuration file.
