Pay close attention to setting this up correctly the first time and 
disabling every service you don't need. It will take you quite some time 
to do so, but it means the amount of patches you need to apply goes from 
about once a week to once every 2 months.

Look into IMAP.

You need 256 MB, I would go for 1 GB.
You need 1 5400 RPM IDE drive for the webserver, I would go for 2 IDE 
drives in RAID mirror (preferebly with an A-brand controller like 
Adaptec). But I believe that the database and the mail will hit your HDD 
harder as the webserver part.

IMHO, the brand of the components matters, not the brand of the whole thing.
