It's straightforward, but there are some catches. They're biggies.

The docs state "When upgrading from ColdFusion MX or ColdFusion MX 6.1, the
installer preserves the existing settings and installs in a new directory,
automatically assigning ports that do not conflict with the existing
installation." Which is exactly what happens. It's been a while since I tried
this, so I don't recall whether there's an option to avoid this side-by-side
setup and install over the top. My guess is there isn't.

Well, that's what you will end up with. It wouldn't be my preferred situation.

Assuming you no longer want to be using 6.1. my recommendation would be to
uninstall it before installing CFMX7. Ideally, you'll install on a totally
clean base OS (patched, but nothing else), but that's not always an affordable
luxury.
If you go the uninstall-reinstall route, can I recommend you choose the
"Multiserver" installation when you install CFMX7. If you've never used it
before, the benefits may not be immediately obvious, but they are many and you
give yourself lots of options you might not otherwise get. Check the DevNet
material for more on the Multiserver environment.
