Do you want the user to change the date?
If not you could make the field a hidden field:

<input type="hidden" name="updated" value="Now()">

for the output in mm/dd/yyyy use:

<cfoutput>
#DateFormat(updated, 'mm/dd/yyyy')#
</cfoutput>
