Nope....somethings afoot and its p-ing me off at the mo.... I have followed everything to the letter but still no luck! I click on the file in the Project File Explorer but the icons are still greyed out.... when I right click > source control all it gives me is Add File to Source Control even though I have added them via VSS....

Um, did you select the file first? The toolbar ignores your current file in the editor, you MUST select the file in the file browser. (A drawback if you ask me.)
