Yes, you can set up virtual directories with the CF MX web server:
http://www.macromedia.com/support/coldfusion/adv_development/config_builtin_
webserver/

webserver/config_builtin_webserver08.html

According to those links, you edit jrun-web.xml, not default-web.xml

Also, if you're curious about the CF MX web server, it's pretty easy to just
enable it, even if you're running a different web server already. For
example, on my laptop, I have the built-in web server listening on 8500 (the
default) and IIS or Apache 2 on 80, and I have CF MX configured to work with
all three.
